Curried Tuna Salad í
kvöldmatinn
½ cup plain yougurt
½ cup mayonnaise
1 msk freshly squeezed lemon juice
2 msk hot or mild curry powder, or to taste
¼ cup cashews or macadamia nuts (owen toasted)1 pound fresh tuna fillets, grilled or poached, cooled and flaked or 2 cans (7 ounces each) tuna in water, drained and flaked
1 cup finely chopped unpeeled apple
¼ cup finely chopped sweet pickle or pickle relish
½ cup raisins or dried currants, plumped in hot water for 15 minutes and dreined
2 msk minced green onion, including some green tops
Minced fresh parsley, for garnish
In a smaller bowl – combine the yogurt, mayonaise, lemon
juice and curry powder. Blend well.
In a larger bowl – combine the tuna, apple, pickle, raisins,
onion and nuts. Stir in the yougurt dressing to taste. Transfer to a serving
bowl and sprinkle with parsley.
Serves 4 as a salad course or 2 as a main course.
